Here and There Malbec
The Malbec is sourced from vineyards in the Swartland’s granite-rich alluvial soils, where naturally low yields produce small, concentrated berries. The fruit is hand-harvested and fermented spontaneously in stainless steel tanks, using 30% whole bunches and 70% whole berries to build complexity and tannin structure. Gentle pump-overs are carried out once daily during fermentation.
After fermentation, the wine is pressed and returned to tank for malolactic fermentation, with 15% completing this process in older 300-litre barrels.
