Gozenshu Misty Mountain

This style of sake retains some of the rice lees after pressing—either completely unfiltered or, as with Misty Mountain, only partially filtered—resulting in its characteristic haze. The remaining rice solids contribute a lively, zesty flavour profile and a rich, velvety texture. Misty Mountain is also crafted using the traditional Bodaimoto brewing method, an ancient technique that produces greater depth and complexity, often expressing earthy nuances and a refreshing touch of natural acidity.
