Chateau l’Ermite d’Auzan Blanc

Sourced from the southern hillsides of the Costières de Nîmes, where the vineyards cascade towards the Mediterranean, this wine benefits from abundant sunshine tempered by cooling sea breezes. During the summer, the marine influence can lower temperatures from around 35°C to 30°C, encouraging even ripening while helping to retain moisture in the region’s characteristic pebbly soils.

Produced from low-yielding, 20-year-old vines yielding around 50 hl/ha, the grapes are harvested early to preserve their freshness and aromatic intensity. After careful destemming, the grapes are gently pressed, with the must cooled to 6°C to encourage natural clarification. Fermentation takes place at 16°C, followed by three months on the fine lees to enhance texture, depth and flavour.

The wine has a subtle yet beautifully fragrant nose, with the Viognier particularly expressive. The palate is ripe and refreshing, with a crisp, almost crunchy texture and impressive substance. Underlying savoury nuances add complexity, while the wine’s freshness and precision reflect the quality and meticulous biodynamic approach of the estate.
