Serodes & Kovač Vallée des Aigles Cazot Orange
Deliberately inspired by ancient winemaking traditions first practised by the Greeks and later the Romans, this elegant orange wine is made by fermenting the juice in contact with the grape skins and seeds. Rather than being heavily oxidative or intensely funky, it offers a lighter, fresher and more refined expression, with plenty of charm and drinkability.
A co-fermented blend of Grenache Gris, Grenache Blanc, Maccabeu and Malvoisie, it gains gentle structure from the tannins extracted from the skins and seeds, while its distinctive amber hue comes naturally from the grape pigments. During fermentation, the cap is gently punched down by hand for eight days to encourage balanced extraction and texture.
