Domaine Billard Chassagne-Montrachet Les Morichots Rouge
Velvety in colour with beautiful violet hues, Les Morichots opens with generous aromas of Morello cherry. The palate is rich and full-bodied, with beautifully rounded, supple tannins. Concentrated yet juicy, it combines depth and structure with an intriguing layer of complexity.
The wine is traditionally vinified in tanks using indigenous yeasts. It is then matured for one year in oak barrels, with 100% barrel ageing, including 30% new oak.
Domaine Billard encompasses around 12.5 hectares of vineyards spread across several appellations in the Côte de Beaune. The domaine’s most significant holdings are in the Hautes-Côtes de Beaune, complemented by smaller parcels in Saint-Romain, Saint-Aubin 1er Cru, Auxey-Duresses and Beaune.
Following the recent transition from father to son, Jérôme Billard has introduced a fresh approach to the family estate, placing a strong emphasis on sustainable, nature-focused viticulture. The vineyards are farmed according to organic principles, with cover crops and rigorous pruning used to naturally limit yields. All grapes are harvested by hand, while fermentation relies exclusively on indigenous yeasts.
Where Jérôme’s father traditionally sold the estate’s wines to the local cooperative, Jérôme has taken the domaine in a new direction and now bottles the entire production under the estate name, allowing greater control over the winemaking process and the expression of each vineyard.
