Pressed as whole bunches using a pneumatic press; cold stabilisation prior to fermentation and ageing in tank at our estate. Secondary fermentation over nine months using the ‘méthode champenoise’ at Rivarose prior to bottling. Fresh, aromatic with hints of strawberries and raspberries. Elegant and dry.
Domaine les Caizergues sits in the foothills of the Cevennes to the north of the city of Montpellier in the South of France. All our vines grow at an altitude of at least 160m and this elevated position – allied to the wonderfully warm sunny climate – means that there are marked differences between the diurnal and nocturnal temperatures during the growing season. This phenomenon allows our grapes to mature slowly and gently resulting in highly expressive wines that ooze a delightful freshness. Our soil is either clay limestone or distinctly pebbly. We are all particularly proud of the estate’s heritage both as a wine producer and as a centre for silk production during the golden age of sericulture in the region. The names of the wines and the branding all bear witness to this.
